Birmingham’s Blue Truck Story
Los Valedores began as a single bold blue food truck on Green Springs, where locals lined up for authentic Mexican street food packed with flavor and heart. What started as a humble idea has grown into multiple trucks, countless happy customers, and now—our first brick-and-mortar restaurant in Birmingham.
Owner William Perez has been sharing the flavors of his heritage with the community for more than five years, serving everything from carne asada tacos and chicken burritos to tortas, vegetarian dishes, and our famous green hot sauce. Each dish is made with fresh ingredients, traditional recipes, and a commitment to bold, unforgettable taste.
But Los Valedores is about more than just food—it’s about people. From the friendly faces at the window to the family-style service at our new restaurant, our mission has always been to make every guest feel like a valued part of our story.
